I bought this package of rice noodles, and had them in the pantry for a month, I took them out yesterday night and put them in the counter so I will remember to cook something with them. The stir fry I made turned out delicious, my husband ate most of the vegetables (which is rare), and rated it ten out of ten and -trust me- he already started to be honest about my cooking long time ago. :)
The stirred fry included vegetables and chicken plus the rice noodles, I just followed package directions to cook the noodles. Next time I will try different kind of vegguies I believe you can always trade ingredients in recipes to make them more interesting, healthier or adjust them to what ingredients you already have at home.

2 chicken breast cut lengthwise
1/2 red pepper or green bell pepper
1/2 regular onion
1 leaf of bok choy (that's is optional)
pepper and salt, chili pepper
1 tbsp chopped cilantro (I use parsley too)
1/2 package of Misun Rice noodles
2 tbsp stir fry favorite sauce, soy sauce
2 tsp olive oil
4. Serve while hot.
